Overlord Taxes are monies paid to the fief overlord, usually a Count, Duke or Earl, who may also be the King. Your Overlord has the power to tax you via a menu option only overlords have access to. The amount they get is determined by their current stature which, when doubled, represents the percentage of your income they can take.
